I found this recipe posting particularly useful, as I did not know about covering the brains with foil to prevent burning. Now I'll be ready for my next dinner party.
But what's a battuto?
A battuto is a "an Italian trinity of lard, parsley, and onion, chopped fine" that is spread over the surface of nightmare dishes, apparently.
